I absolutely love bread and will never give it up regardless of the circumstance. Quick breads are a great way to get bread without the wait of yeast, and accommodating to a busy schedule. The best thing about this recipe is that you can change the extra ingredients to your taste. For me, I love a savory loaf that can stand alone and I hope this recipe satisfies your soul!
IMPORTANCE OF FRESH HERBS & CHEESE
Irish soda bread can be very bland tasting since yeast plays such an important role in flavor. But with the addition of fresh herbs and some shredded cheese, the taste will blow your mind for a thirty minute bread. I made this loaf with dried rosemary and fresh, appreciating the fresh vibrant taste more mouth-watering. The smell of the fresh rosemary will fill your kitchen and make you drool.
I do also want to stress that you should use sharp cheddar over mild, purely for the flavor. The sharp cheddar carries more in the loaf and has a perfect balance of flavor compared to mild cheddar. But if you do not like the taste of sharp cheddar, than you can substitute with a cheese of your choice. Just make sure you pick a cheese that can keep flavor after being baked at a high temperature.
INGREDIENTS
2 cups all purpose flour
1/2 teaspoon baking soda
3/4 teaspoon cream of tartar
1/2 teaspoon kosher salt
1/8 teaspoon cracked black pepper
2 tablespoons fresh chopped rosemary
2 cups grated sharp cheddar
1 cup buttermilk
1 large egg
INSTRUCTIONS
Heat the oven to 425 degrees F. Lightly flour a non stick baking tray or spray with a non stick spray.
In a large bowl, whisk together the flour, baking soda, cream of tartar, salt, pepper, rosemary and cheese.
Add the egg to the buttermilk and beat until mixed.
Add the buttermilk mixture to the flour and lightly mix through until it becomes sticky and a ball forms.
Dump the dough out onto a flour dusted work surface and roughly knead the dough into an ball shape. It may be on the wet side so have some extra flour on hand for dusting.
Place the dough onto your prepared tray or tin. Take a sharp serrated knife and cut an X on top of the soda bread.about half an inch down into the dough.
Bake in the oven for 25-30 minutes and the top is golden brown.
Let cool for 20 minutes before slicing and serving with butter.
Cut some thick slices of this warm bread and cover her with some butter and enjoy. Just a warning, this bread won’t last the night. So don’t feel bad when you have to make another loaf the next night.
