What You Will Need

4 cups flour

2 tablespoons baking powder

1 teaspoon baking soda

3 sticks salted butter, cold & cubed

2 large eggs

1 1/2 cups buttermilk, plus 4 tablespoons for brushing the rolls

*if you do not have buttermilk, you can make some by adding 2 teaspoons lemon juice to milk and let it sit for 5 minutes

Step by Step

  1. In a large bowl whisk together the flour, baking soda, and baking powder. Add the cubed butter to the flour mixture and with your hands, pinching and mixing the butter in until small pea sized amounts of butter remain.

  2. Beat the eggs together in a separate bowl, then add with a rubber spatula or wooden spoon until combined. Stir in the buttermilk until the dough comes together into a sticky mass. If it is too dry, add in a tablespoon of buttermilk at a time.

  3. Cover the bowl in plastic wrap and let sit in the fridge overnight, or in the freezer for 30 minutes.

  4. Preheat the oven to 400 degrees

  5. Flour a surface and roll the dough to 1/2 inch thickness.

  6. Use a mason jar lid or pastry circle cutter to cut the dough into rolls and place on a parchment covered baking sheet so they are touching.

  7. Brush on the remaining buttermilk to the top of the biscuits

  8. Bake until golden brown for 15-20 minutes
