Banana Muffins

We all buy bananas with every intention of eating them before they turn black. But sometimes we get tired of making the same recipes. I have your solution here with these banana muffins that you can mix and match to everyone in your household’s palate. In my household, we appreciate the idea of having a but of variety so eating the same breakfast treats do not get old quick.

This recipe is quick and easy, and for those who do not own a stand mixer or hand mixer, are easy to whip up by hand. The tools you will need are some basic mixing bowls, a whisk, measuring cups, and a spatula of some sort (I personally love the rubber spatulas). This is also a great recipe you can make with your children or if you are in need of a quick breakfast option.

Banana Muffins

PREP TIME: 10 MINUTES

COOK TIME: 20-22 MINUTES

INGREDIENTS

1 1/2 cups all purpose flour

1 1/2 teaspoon baking soda

1/4 teaspoon salt

1/8 teaspoon nutmeg

1 teaspoon cinnamon

1 stick salted butter, melted

3 large ripe bananas, mashed

1/2 cup sugar

1/4 cup brown sugar

1/4 cup milk

1 large egg

1 teaspoon vanilla extract

1/2 cup walnuts or pecans. optional

1/2 cup chocolate chips, optional

1/2 cup peanut butter chips, optional

instructions

  1. Preheat the oven to 350 degrees. Line and spray your cupcake or muffin liners

  2. Mash your bananas with a fork and set aside

  3. Mix all dry ingredients together and set aside.

  4. Place sugars, butter, egg and vanilla together until well incorporated. Add in the mashed bananas and mix until just incorporated.

  5. Once done, add in the dry ingredients, folding them in making sure not to over mix the batter.

  6. Fold in the nuts, chocolate chips, or peanut butter chips.

  7. Fill tins about 3/4 full and bake for 20-22 minutes. If you are making them in cupcake size, check with toothpick at 18 minutes to see if they are done

  8. Enjoy!

Additional notes

I made a variety of mine, all including the chopped pecans, but adding chocolate chips to 1/3 the batter, peanut butter chips to 1/3, and leaving the remaining plain. You can make these any which way,

adding any kind of additions you’d like. That’s the beauty of this recipe!
